Don’t Beet
yourself up if your libido is running a tad low. Rumour has it that beets can increase
blood flow due to their nitrates. Increased blood flow to the nether regions is
one of the mechanisms Viagra and other pharmaceuticals create their
effects. But the benefits of beets have long been associated with sexuality and have been used for thousands of years. Their history stretches back to ancient times, and the earliest signs of their cultivation was about 4000 years ago in the Mediterranean region. I think the Meds were onto something.
Beets contain high amounts of boron, which is directly
related to the production of human sex hormones. Many people don't like beets or consider it only a special occasion dish, but I think if you know how to prepare it and flavour it, this superfood should be on your plate every day. Or in the case of this recipe, in your bowl.
INGREDIENTS:
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 6 medium beetroots, peeled and chopped
- 1 (500g) tub beef stock
- Salt and freshly ground black pepper
- Double cream
METHOD:
Warm the olive
oil in a large saucepan over medium heat. Stir in onions and garlic; cook until
soft but not browned, about 5 minutes. Stir in chopped beetroot and cook for 1
minute.
Stir in stock
and season with salt and pepper. Bring to the boil; cover and simmer until the
beetroots are tender, about 20 to 30 minutes. Remove from heat and allow to
cool slightly.
In batches,
add soup to a food processor and pulse until smooth. Return soup to saucepan
and gently heat through. Ladle into bowls and garnish with a swirl of double
cream.
Serve with
crème fraîche instead of double cream, if desired.
